I recently obtained a<br \/>&#8220;professional competence in the bakery and pastry-making sector<br \/>certificate&#8221; in Brussels. After that, I was ready to start on my new<br \/>adventure, but I quickly realized the biggest question I faced was what kind of<br \/>pastries I wanted to sell.<\/p>\n<p><!-- \/wp:post-content --><!-- wp:paragraph --><\/p>\n<p>Having spent numerous summer holidays in England as a child, I hold very<br \/>&#8220;sweet&#8221; memories of all the pastries I discovered there. Fondant\u00a0<br \/>fancies, millionaire shortbread, digestive biscuits, chocolate sponge rolls,\u00a0<br \/>scones and many more have coloured those years. I completely fell in love with<br \/>British bakes!<\/p>\n<p><!-- \/wp:paragraph --><!-- wp:paragraph --><\/p>\n<p>On the other hand, I also have tender childhood memories of the little choux<br \/>\u00e0 la cr\u00e8me and frangipane pastries we got from our local market and all the<br \/>marvellous more \u201cclassic\u201d pastries we regularly ate at home, such as<br \/>merveilleux, javanais, mis\u00e9rable, \u00e9clairs, \u2026<\/p>\n<p><!-- \/wp:paragraph --><!-- wp:paragraph --><\/p>\n<p>Big dilemma! Would I sell British bakes or turn to the more \u201cclassic\u201d French<br \/>p\u00e2tisserie? After spending countless nights mulling it over, I woke up one<br \/>morning thinking &#8216;why choose&#8217;? Let\u2019s just do both! And that was the beginning<br \/>of \u201cLady Bedford\u201d. The name I chose is definitely\u00a0British ; it refers to<br \/>the 7th Duchess of Bedford, who, it is said, inadvertently \u201cinvented\u201d the Afternoon Tea.<\/p>\n<p><!-- \/wp:paragraph --><!-- wp:paragraph --><\/p>\n<p>Lady Bedford offers a wide variety of British and \u201cclassic\u201d cakes, sweet; and<br \/>savoury tarts, biscuits and Afternoon Tea. All my pastries are made with a lot<br \/>of love and care, using only the best ingredients.
