This year’s Easter section is a wonderful strawberry tart with a lime and mint cream on a trocadero biscuit. This soft biscuit is made with a mix of almond and pistachio flour. This tart is so fresh and reviving. A real celebration to spring!

Hot cross buns are also on the menu. A typical British Easter bun. I make mine with raisins, orange and lemon zeste, and a lot of spices. They’re best eaten on the day they’re made but, I find them delicious the day after toasted with some butter and marmalade.

Meringue and chocolate mousse nests, a perfect little treat if you like meringues and chocolate.

Asparagus quiche with ham, dill and a little Parmesan cheese. Also possible without the ham. This is a delicious quiche filled with flavour. This quiche will only be available around Easter.
